One that isn't currently taught: how to learn.
It never ceases to amaze me that this vital skill is not taught in a systematic manner, but is rather supposed to be "picked up" by students along the way.
What would the course outline for Learning 101 look like?
1. Comprehending what is being asked.
2. Analyzing data from a variety of sources
3. Plotting data so that it is memorable and makes sense to the student
4. Communicating effectively-this means not only answers, but how to ask teachers questions when something isn't understood.
If you know how to study, you can do well in any subject, even one you don't really like.

You've got to be kidding? Kids view school as a social event and nothing more. Kids these days are perhaps the lowest form of human endeavor that walks the face of the earth. If i were to have to make a choice. I would have to say "Physical Discipline" with a 2" belt laid across their butts and mouths once a day until they graduate.

I also agree with the suggestion of Personal Finance. Students need to be taught about how to manage their money: how to make a budget, how to balance a checkbook and/or write checks. They specifically need to be taught about credit cards and how they work (especially the interest part).

Diet and fibre. This would encourage kids to get out of their heads and let them explore the dynamics of their bodies.
