Shrove Tuesday is the day before Lent begins - Lent begins on Ash Wednesday. (Lent is 40 days long, and is the period immediately before Easter Sunday. Easter Sunday is calculated as the first Sunday after the full moon after the (northern) spring equinox. The "Ash" comes into Ash Wednesday in the ritual that is carried out on that day, which involves dabbing worshippers with some ash, to represent mourning. Lent is intended as a period of penance for whatever sins one may have committed since last Easter.)
The "Shrove" part of the name comes from the verb "shriven", meaning "cleansed of sins", that is people used to go to confession on Shrove Tuesday.
The pancakes come in because Catholics used not to be allowed to eat any meat or meat products during Lent at all: and so the aim of the pancakes was to use up the left-over fat.

It's the start of Lent (e.g the 40 days that Jesus fast and went through the desert before he died). It's the 40 days leading up to the death of Christ. Pancakes are involved because it's the start of the fasting period. Households made pancakes to use up all their eggs, flour, milk etc. before fasting.

I can't remember the meaning of grove tuesday, but I do remember one of my teachers telling me that a group of people came together and mixed the food that they had into a lot of pancakes. This included eggs, flour, milk, etc.
