Wow, looks like you've gotten yourself into a pickle. I may be able to at least steer you in the right direction.
1) Don't focus ALOT on her looks, or she'll think that's all you care about. But DO tell her how beautiful you think she is. Not "hott", but pretty, beautiful or something like that.
2) Tell her how great her personality is. Do you love the way she makes you laugh, even when you're down? Or the way she always finds the silver lining in every situation?
3) Point out the cute things she does that you've picked up on. Is it the way she wrinkles her nose when she laughs? Or how she burps in front of you, then giggles and apologizes, but doesn't care that you saw?
4) Use a rhyming dictionary to help you out, but don't use big words to make you sound smart, or just because they rhyme if you don't (or you don't think she will) know what they mean. If you don't have arhyming dictionary, use www.rhymezone.com
Good Luck, Hope that helped!

Depends on what she's looking for out of it. Odds are she's not wanting something that rhymes, she wants something that you put effort into. Sentimental and crap.... uh, I'd recommend reading a few of the more classic romantic poems to start with, and check into what music she listens to. Song lyrics are poetic, find her favorite and write similar lines.... that should make it fairly easy.

Try to write something that reflects what u share with her and her personality. If possible, put her name in. It doesn't have to rhyme- as long as it has a nice rythym to it- it can't sound like a paragraph. If u prefer it to rhyme, u can go here- http://rhyme.poetry.com/. Good luck!

Roses, walking in the park holding hands, Kissing in the dark, candles. Something mushy like that would go by very well. That is what my fiance read to me when he purposed.
