Before knowing how to swim you always sink, but after that you learned you float but whyyy?

I think your wrong. before you knowing swim you do float but just bellow the surface because of unbalance. What you do is you will learn how to balance your body in the water.

It is because they are relaxed...when the muscles tense up (like when you are nervous about drowning) they become more dense and do not float.

try to concentrate more on relaxing and less on floating/swimming

my guess is that before you learn how to swim, you thrash around and are to scared to just lie on ur back!
