any exercises which don't affect growth?

Any exercise that's done properly won't effect growth. The idea that weight training effects growth is just a myth, don't listen to it. There has been no proof whatsoever to date that says that exercise effects growth so don't believe the rumors.

With that being said, good exercises for legs are squats, calf raises, lunges, hip flexors, and leg presses (machine).

The actual dunk part isn't very hard if you can jump high enough. It's more about timing and body position than just jumping. If you practice it enough, you'll get use to it. However, I wouldn't recommend for a beginner to be dunking in real games simply because you'll most likely end up missing an easy shot and on top of that the coach will bench you right away. That is unless you have a 35" vertical or you're 6'8" or taller. Most people aren't that tall and most people can't jump that high.

I personally don't look to dunk in games. Dunking to me is something that I do at practice only. Why? Because 1) I can't leap like D-Wade and 2) I'm not tall like Shaq 3) I can put it in just as easy without having to actually slam it in. If you don't have height or really good leaping ability, stick to layups. But that doesn't mean that 5 years from now you won't have leaping ability or height. . . Practice, workout, and you'll get there.
