I put a blow off valve on my car, because I wanted that cool "release air" sound. But the thing is, I drive an automatic. When will I hear the sound? Also, my engine isn't a turbo, it's stock, so will that affect the sound?

Dude the sound your a talking about is for Turbo charged engines only. The purpose for that cool sound is to release back pressure that if it is not vented can cause turbo lag. That's when the turbos take longer to spool up. So u will only hear that sound when you have a turbo on ur car. And how u installed a BOV on a naturally aspirated engine is beyond me but if u say so.
Also you hear that sound between shifts.

Never. On naturally aspirated engines, there is no pressure (only vacuum) in the manifold so it will never have to release excessive pressure

blow off valves are for release of systems that have too much pressure, and are in danger of pressurised explosion.
