I think what you are looking for is to change the normal.dot. This is the default template that opens every time you use Word.
First you have to open normal.dot which can be found in:
c/Documents & Settings/YOUR NAME/application data/microsoft/templates. This will open the default template; change the line spacing by selecting Format/Font, make your choice. For the line spacing select Format/Paragraph and make your choice.
Close the normal.dot and save your changes. Then, every time that you start a new document in Word it will have these settings on it.

Go into "Format" on the toolbar, click on "Fonts" and choose the font you want. Then instead of clicking "ok" click on "default," this will bring it up the way you want it to be. This will now open your Word documents in the font you have chosen. The new font will now be your "default" font.
As for spacing, I am not sure you can choose a default spacing that remains the same. You may have to change it for each document.
Give Microsoft feedback about features you think may be valuable -- companies respond to their customers and if enough people are looking for the same changes, they will change it eventually. Good luck!

open a new Word document and follow these steps provided by Microsoft.
http://support.microsoft.com/kb/291291
This article applies to the issue with the font. you can change the default for the page setup, however it does not appear that you can change the default line spacing.
FORGET THE ABOVE. you can change the default template. do a search for the file "normal.dot" double click to open it. this will open what appears to be a new word document. set your favorite font and line spacing. when you have it customized the way you want it. choose "file>save as... and verify that the path to save is:
C:\Documents and Settings\YOUR USER NAME\Application Data\Microsoft\Templates
save "normal.dot"
close Word. open word and bingo... you have your preferred settings. to change back, follow the same steps. just use the old settings.

Once in Word, go to Format along the top, then click on Font, choose which font style size etc and thenat the bottom left hand corner their is a default button click on this. For spacing, click on the spacing tab at the top, again choose which options and then press default. Then whenever you open a new page in Word, your default settings will be there.
