Hmmm when said aloud would sound like "Hum" Generally it's used to depict someone pondering a statement or question. Can also mean a variety of other things just as it can when spoken aloud.
eh is usually just used to depict an upward inflection at the end of a statement or question when an agreeing response is anticipated. Such as "Sure is some hot weather we're having eh?"
Hmmm eh I haven't personally seen much of, and I play online games almost religously but if someone were to say it to me, I would expect that they were either trying to show that they were puzzled or pondering something and expected me to agree with it, or that they were anticipating that I would be puzzled or need to ponder a previous statement.

They are either thinking about something, or are mocking Canadians by adding "Eh" to the end of it.
