I was wondering do I actually need the stereo headset which is almost double the price

You can, but it would sound much better in stereo.

Some Bluetooth headsets do not allow you to listen to music through them, and can only be used for calls. However, depending on the make and model of phone, you may be able to buy a generic headset, which is like buying an "own-brand" unit. It's not the official headset for your phone, but it works just the same for a fraction of the official price. I'd check out your local market or independent phone shop for details and prices. Take your phone with you to ensure you get the right headset, as some are similar, but not identical.
