The VERY best Italian in Vegas, in my opinion anyway, is the newly opened Rao's in Ceasar's Palace.
It is the Vegas location from the famous Rao's from New York City. The original Rao's is located in Harlem and is over 100 years old.
The service is welcoming and very attentive, the atmosphere is upscale yet at the same time very comfortable and the food....well it is out of this world.

They have some of the most amazing pasta's you will ever try. The one pasta w/ artichokes was so good it rendered us speechless. My friends and I each ordred something different then passed our plates around family style to try a bit of everything. We all went crazy for that one dish.
Oh and the desserts, the lemon chicken, the raviolli, the antipasto......
I will visit there again!

There are a few restaurants in the Venetian that are good but if you are off the strip Bertolinis near Summerlin. Or Ferraros on Flamingo, its close to the strip & fabulous.

Try the Rio Hotel and Casino. They have a great Italian restaurant and the best buffet you can find.
