First grade? LOL...delightful age! How about gathering beads, colored strings, small precut wooden shapes (you can get all kinds at craft stores) and letting them make their names with them?
Or, gathering twigs, get some spanish moss, some fake greens and let them create their own birdhouses? You could get some plain t-shirts and let them decorate them with paints....or, teach them to make a diorama?

I teach elementary art and this is an easy and impressive projects. Ask your local supermarket to donate some styromfoam meat trays (smooth on the bottom). Each student can use a pencil to draw a simple design or picture on the bottom of their tray. Use paint (any kind will do) and an ink brayer to roll the paint over the picture. Have the student make prints of their pictures. These are called "mono prints". You can mount their art on a contrasting piece of construction paper. It is really cool!
