First of all you must understand enzymes are catalyst which can control the reactions or chemical conversion. so based on that enzymes are used in different field. for example in environmental control enzymes are used to degrade the biological wastes. In pharmaceutical the enzymes are used in research and development to study the various biochemical pathways. If you take beverage industry the enzymes are used for maltose degradation and also to enhance fermentation.

Restriction enzymes are used in molecular biology research - they cleave strands of DNA at specific points.
Various enzymes are used in also used in biopharmaceutical research.
