pH is concentration of H+ ions in solutions.
Since limestone and shale are not solutions they cannot have H+ ions and hence no pH.

It's a meaningless question.

And by the way, "What is the pH of Hydrochloric Acid?" is also a meaningless question. Only meaningful would be "What is the pH of this particular vat of hydrochloric acid?"
