Moved to the south 7 months ago and at first it was quite a shocker to be addressed as Ma'am but now I use it too. I kinda like it along w/Sir.

On the whole, yes, if they're older than me. It depends a lot on the circumstances.
Doing the Parris Island Sir, Yes, Sir! routine with the lady at the post office when all you're getting is change, is a little over the top, for me.
I think showing people respect, in that way, is often a matter of judgement, and timing.

Oh totally... It is just a courtesy thing. If you are more familar with the person or group, you can drop it. But with strangers or in a business setting, it is just good manners.

No. It's doesn't feel right to me. I do believe in respecting people. But I would rather call them by their name.
