Good question. In short, we try to understand how the Universe and phenomena inside the Universe work. We do this in two ways.
First, there are the Observers. Observers use telescopes (radio, IR, optical, UV, X-ray, or Gamma ray) to see what's in the sky. They can make images or they can take spectra. They try to interpret the physical conditions that would give rise to these observations. Contrary to popular belief, observers spend very little time at the telescope: most of their time is spent analyzing the data during daylight hours.
Secondly, there are the Theorists. Theorists try to figure out what sort of physical processes give rise to the conditions seen by the observers. They consider the history of the Universe and subsequent evolution of structure within it. They try to solve the equations of physics to do so: sometimes they can do this with a pencil and a piece of paper, but often they have to resort to using supercomputers to solve the systems numerically.
There is a sort of friendly competition between the two groups. It's rather fun, really. Hope this answered your question.
