Yes you should always receive a payslip and at the end of every financial year you should get a p60 which details all the tax paid for the year.
You can check direct with the tax office to see if regular payments are being made towards your tax.
If your employer has been taking tax from you and not paying it to the taxman, that is fraud, so you should check it out asap if you have any doubts.

Agree with the other posters on here - you have to have a pay slip by law. However, if your employer is deducting tax and NIC from your wages and not paying it over to the Revenue, your employer is liable, not you. In some cases, your employer may be liable for your tax and NIC even if he is not deducting it.
