I have seen pics of many, but can't figure out how they are used on a lamp

Older style lamps use the finial to attach the shade to the top of the harp. The harp is a metal thingy with two sides that attach below the lamp socket and join at the top with a screw sticking up. The shade has a ring on top that goes over the screw, and the finial screws down on top of it to hold it in place.

It's the decrorative do-faf on the top of the lamp - sometimes they are used to hold the shade in position.
