I am bringing the water into the cabin by hand in portable water containers.

A gravity feed is simple and convenient up to the point of reloading the tank up near the ceiling. Either you raise and lower the tank to fill it from buckets near the ground or you use a hand or foot pump to move the water up. Ordinary sink valves can be used although you will open them more to get the flow, which will be low.
If you can get any voltage for recharging (solar or wind for example) there are a lot of RV water systems that turn on the pump when you open the fauscet.
Pressure systems have a problem with leakage of air.
Theaters use pressure spray tanks (like for insectides and wood preservatives) to supply water to sinks on stage, but these hold a rather small amount of water.
Where are you getting the water from and how will you move it?

First of all, my grandmother as well did that. But she passed away in November. Your grandmother might be becoming senile. Alzheimer's Disease might be the case why she might be trying to urinate in the sink or cups. She might know she needs to use the toilet, but keeps forgetting and urinates in the sink or cup. The cup part, well, is quite unknown but the sink part is very common in senile people. I remember when my grandmother accidently urinated in the bath-tub. Take her to a doctor first before checking into other things. If she is tested and nothing is wrong, take her to a therapist. She might be experiencing something that has to relate to that, happened in the past. Like possibly she had a moment in life when she was forced to urine in a sink? Another reason might be that she is far to busy with household tasks to take the time to walk to the bathroom. I'm no expert on this but I know she might have Alzheimer's disease. Please be safe God bless you :)
