I imagine if you focused on any other number and put as much thought into that number as you do the number "111" then you would begin to see that number just as frequently. Just like when you learn a new word, before long it seems amazing how many times you see that word and you never noticed it before.
It's all mental- I can almost guarantee that you don't look at the clock at 1:11 more frequently than you do at, say, 1:12.

Actually, I've seen the clock at 11:11. I heard somewhere that you are supposed to make a wish when this happens. Some sites claim it to be the work of "angels." Personally, I don't believe in this 11:11, 12:12, 10:10, 22:22, 12:34, 2:22, 3:33, 4:44, 5:55, etc., stuff, since I think that if anyone looked carefully enough, many coincidences could occur.
The first source below believes that this phenomenon is caused by Angels. The second source is not as biased as it states that "Some people believe that when they notice the number 1111 or the time 11:11, that there is an underlying reason besides mere chance or coincidence. A belief of this nature is related to the idea of synchronicity."
I realize that you asked about the time 1:11, but I guess this might be on the same track...

i saw the clock at 1:11 today

when i was a kid i used to always try to look at my watch at 111 222 333 and so on all day all nite until i can do it at 11:11:11 (last on is milli seconds) and after 6 month i can do it all day, i can tell time without a watch down to the seconds no bs.
i like to think it's just normal radom stuff, i gain it by practice, I also belive it's good luck to line up with time, i can't do it anymore, i don't even know what date today is

I have a digital clock both in my bedroom and my car , the amount of times I either awake or just glance at my clock whilst driving and see the same #'s on the dial is very often.. I have no idea why this occurs.. I have actually bought lotto ticket's to the effect of #'s I have seen on particular days ( we have different ways in Australia for you to lose your money).. Never done me any good... I have personally seen 1:11 and 3:33 pm this day , and now it's 5:05 wonder if I will see all the 5's ? "Murphey's Law" will say , no I won't...

No, but if you find an answer let me know. I'm haunted by the number 11:11. If I miss it on the clock, then my change from a store will be 11.11, or I'll see a population sign that wil be 1,111, or some number on tv, or a date, or anything, but it comes up once a day everyday since I was young.

Not repeatedly, but 111 was once superbike racer Aaron Slight's racing number. He was/is a great Kiwi rider who painfully never won the Superbike World Championship.

wow. This is so funny. What I see is 12:34 all the time!!!!! It could be noon or midnight, and it's so weird. Sometimes I would just look at my watch by instinct, not because I want to know the time, and theeeeeeere it is...12:34. I'm not kidding. It scares me.

Do you sniff Liquid Paper? It contains 1-1-1 trichloroethane, which is toxic.
But seriously... I think it's just coincidence. You just happen to notice numbers which make patterns, more than you notice "random" numbers. Mathematically you have the same chance of seeing 1.11pm as you do of seeing 1.43pm, it's just fun to notice the pattern so you remember it.
