What fish will be good in the same tank with fancy guppies and LIVE plants and how do you care for them.

Some good fish to go with guppies would include other livebearers like mollies, platys and swordtails as well as danios, and lots of types of tetras like neons, glolights, head and tail lights.

The best kinds of plants for a beginner to get woud be java moss, frog bit, salvinia or some of the bunch plants like elodea or cabamba.

All of those plants would also be good in a tank with guppies and the other fish I mentioned. Plants need plenty of good light and a little fertilizer every once in a while. A good pet store or aquarium shop can help you with that, but be sure it's not a big chain store, try to find a small home owned pet shop. They tend to know more about it.

Java fern, java moss, and most crypts require very little maintanence. Elodea and anacharis (from my experience and from what I've heard as well) grows very, very slowly in a tropical tank, but other than that, it's a good plant also. Guppies and platies tend to nibble on camboba, so you might want to stay away from that.
