I think it's the one that says if you have an infinite number of monkeys scrambling over an infinite number of typwriters, all of Shakespears Sonnets will be produced by random chance. As will every other literary work that has ever been written or ever -will- be written.

Infinite Monkey also works in statistical pattern recognition--if you train enough classifiers randomly, you will eventually get a classifier that learns the data perfectly.

Something about if you give a monkey a typewriter (back in the day - I guess a computer would make more sense now...), and let him type, eventually he'll type out the complete works of Shakespeare purely by chance. :-)
