Here's how it works: when it's charging, the device stays on, even if you do turn it off. It doesn't hurt the battery or anything, that's just how it is.
To completely turn it off: on the 2nd part (direction pad) of the controlls, press & hold on the down button, and press & hold down on the 1st button (back). Press and hold them both at the same time and it will COMPLETELY turn off.
If you want to leave it in a memory like state, where it still able to pick up from where you left off, then just press and hold down on the 3rd button (play/pause). That will leave it in a memory state, but it won't turn it off completely.

For the video thing, it should be coming out soon, from what I've heard. For right now though, you can do this:
I found a neat site where you can download YouTube or Google videos. It's an add-on that works only with Internet Explorer (no Firefox :) all you just have to do is watch a youtube video, and if you want it, you just find "ZuneIt" somewhere on the browser, and it will upload the video to your Zune software. It will take a while, like 7 - 14 mintues to put a video in the Zune software though. Sometimes, it can't even do it at all. So it's not perfect. But it puts video on your Zune, so try it: http://sourceforge.net/project/showfiles...
all you have to is press the file link in the box, and wait. My browser stopped it, because it thought it might be something harmful, so make sure that you allow it to go in to work. Then do the set up wizard, and then you're done. Find a youtube site video, press ZuneIt somewhere on your browswer (it might be extended into the button that is >>) and then wait for a while. While you wait, you can do whatever you want, like look for another youtube video and ZuneIt also. After it's done loading, it should be in the video section of the Zune software. If it doesn't work, the computer will tell you that. So fine another video. So just wait awhile, and videos will appear in the Zune software. Be patient. Good luck.

1. Press the "Pause" button. Whatever is playing will stop. The screen will go black after the amount of time you have configured in your Options.... anywhere from 0 seconds up to several minutes.
When the screen goes off, the Zune IS off.
Now, if you're talking about the little "charging" icon at the bottom that appears when you're charging it up, you can't turn that off. But when the Zune finishes charging, it cuts off the icon and shuts off the screen automatically.
