Sounds like one of my many Comp IIII in class assignments from when I was in high school. Read a book in preparation, I wrote a essay that scored an 8 over Frankenstein in an hour. It was awesome. It's easy because you can read the book, sketch an outline before the hour, and then head off into your essay when you get to class. Good luck on your essay!

Pick something that you know a lot about already. For example, if you have a pet, write about the breed of your pet. Or if you know how to bake, write about how to bake dynamite chocolate chip cookies.
Be sure you pay attention to the writing prompt though. Answer the prompt in one sentence first - then begin your essay so that you don't miss whatever the assignment was asking.
If it's completely open just pick something you already know and it will be easier to locate sources and references for it.
