and why is it important for organisms to maintain homeostasis?

Homeostasis the maintenance of regular internal conditions despite a fluctuating external environment. Organisms have to be able to maintain homeosasis to keep all organs and internal systems operating at their prime. For example, if the body could not maintain its temperature, (so our bodies would get warmer when it was hot) our enzymes would denature, and many biological processes would cease, and we would die.

Homeostasis is keeping in balance with the surroundings.

Some ways humans maintain homeostasis are:
1. Sweat and turn red to cool off when bodies are too hot
2. Shiver when bodies are too cold
3. Put out less urine when we don't drink enough water
4. Put out more urine when we drink more water than we need
5. Remove extra glucose from the bloodstream
...

It takes energy for an organism to maintain homeostasis. But homeostasis makes sure that an organism's cells have the conditions they need to function properly.
