i have been having problems, it will usually tell me i cant convert

It's one of the general settings. Edit your preferences, Advanced, Importing.

Choose MP3 Encoder as your default.

That simple!

It has to be - nobody would bother with MP3's if they could not use the CD's that they bought at the store...

I don't use iTunes so no help there... but MediaMonkey, Jukebox, and Zune will all let you rip and burn to your hearts content.
