If you are asking about the bird - symbol of Greece, it's the eagle with the two heads. It was the symbol of the Byzantine Empire and it's being used today by the Church, the Army and some football teams.
The two heads on the eagle are symbolizing the power of the Byzantine Empire in the East and the West.

As far as I know the country has no such symbols other than the flag and national Anthem. Country bird, or tree or anything else are Anglo-Saxon concoctions in search of identity. The Greeks have not had such problems. However, I must admit that the country insect must be the fat August fly.
