White is the user of healing magic, typically known as 'good' magic. They cure status effects such as poison, paralysis, revive party members, and cure injuries (hp.) In some of the Final Fantasies, they have some fighting magic as well (such as White or Holy from Final Fantasy 4) but for most of the 12 so far they're limited to curing.
Black magic is basically the 'evil' magic and is used to harm or hamper opponents. Typical spells for the series include the Bolt or Lightning, Fire, Ice, Water, and others. This set of magic also includes casting status effects (such as Frog or Poison), and is the most destructive of the four sets.
White and Black mages can only use wands and staffs as weapons (and in some of the series, bows.) and they can't equipt armor apart from robes. This means they are literally the weakest strength and armor wise in the game, and die very easily, but they do get to use their redeeming magic.
Red mages aren't in all of the FFs, but in most of them. This group is a combination of White and Black magic. Think basically a Grey mage, but instead of naming it grey they're red. Because they're using not one type of magic but two, their spells aren't quite as powerful as either a Black mages or a White mages, but they make up for it in versatility. Also, in some of the FFs the Red mage can act as a type of weak fighter, using some swords and armor, while White and Black mages can't.
Blue mage is only in three or so of the Final Fantasties. There are wide variations between the Blue mage as well, but the main definition seems to be that Blue mages learn from their enemies attacks and cast it back at them. For example, goblins as enemies can cast Goblin Punch. If this Goblin Punch hit a blue mage and the mage survived the attack, the Blue mage would then be able to cast Goblin Punch forever. Final Fantasy's don't use this type of mage in all of the series, so there's no real set rule about what weapons they can and can't use, like White and Black magic.

i do no longer know, yet I anticipate that is because of the fact of that is dramatic characteristics. In a dimly lit theater you will not often see the wand, yet you will see the top gleaming in the gloom! interesting question so I went and appeared it up on wiki the place it says 'in line with their magical symbolism, degree magicians usually use "magic wands" as component of their misdirection. those wands are traditionally black, with white assistance,' so i assume i became into top ;o)
