Because of modern life and choice.
If they didn't have preservatives in them most would be off be they even got to the shop.
we used to shop daily for the things we needed.
Now with the way we live and work, we tend to do a big shop weekly.
So that's the reason.

mainly for longer shelf life. We need perservatives so that microbacteria won't grow on our food to contaminate it.
