I only see them around Christmas, but I have two from the holidays, and am wondering if they will live year round if I transplant them...

They do live year round. But they do best in hot, humid areas.

Wiki has a decent article on them.

Poinsettias live year around. If you water them, let them have bright, non-direct light they will flourish. They will grown and fill out with lots and lots of leaves, but they will all be green. After a summer of good care, you will need to start preparing them for the "shock" treatment. They need 12 hours of light, and 12 hours of total absolute darkness. Usually starts around 2-3 months before the holiday, after a few weeks, you will see that the top leaves of the plant will start turning red.
