We just pulled very old wallpaper off of plaster walls... this wallpaper had been painted over many times, in fact, the plaster looks like it has never been painted at all.... what prep do we need to do to paint these walls? Is there a specific primer for plaster walls?

A latex primer is fine. Do be sure you have all the glue off. If glue is left behind you can have problems with paint adhesion down the road.

If you already started ripping then you are going to have to take it all down since the tear marks will show through the paint. Mist the walls in small sections with warm/hot water, then scrape (plastic scraper so you don't damage the drywall) If you don't have a scraper try an old credit card or plastic card of some sort. Try steam (a clothing steamer, or iron) is it is stubborn. They do sell a devise that makes scratches in the paper so the water can get under into the glue, so you may be able to improvise something like that (not too deep though or there will be a lot or wall repairs to do). After you get it down, make sure to wash the walls well to get off all the residual glue, or the paint will not stick well.

You can use a basic primer of any kind but the best thing to use is "Killz". It blocks any moisture, mildew or bacteria from coming through the plaster which can create streaks and spots in your paint. Good Luck!!

You can now get a primer and paint all in one. Kilz makes it now, not only the primer but the paint. You can do it all in one motion.
