Alot of things.
They learn to understand different problems a patient can have, how to recognise certain disorders or problems. They learn how to lead a person to understand more about themselves, the correct questions to ask to help a person open up and discover the roots of any problems that have and how to lead that person to a solution that is right for them.
They also have to learn about themselves. They need to learn to recognise their own stereotypes and their own prejudices (because they are still human) so they don't let them interfer with their work. They are taught it's okay to have prejudices but you cannot let them interfer with helping a patient and if you cannot deal with something you must refer the patient to someone else.
They learn alot of things, it's quite a complicated thing. Although it may seem like it doesn't take much training, it really does, and it's important training.

All the therapists I've ever met were drawn to that field because they were messed up themselves. So the first thing they probably learned about was how to fix their own problem.

They about themselves first. Because it takes a crazy person to help and relate another crazy person. So if they are good it's because it's natural not that harvard B.S. That they learn that makes the patient more confused & crazier than they was when they came in. lol

They learn to say "And how did that make you feel?". Also, how to pretend they are really listening and how to make great doodles on their pads of paper. I like to doodle. I should have chosen that field to study.
