The instructions tell me to connect the negative clamp to the chassis but I do not get good readings or adequate results that way? What is the danger of connecting directly to battery posts?

Go with the top answer, except never connect to the alternator. because the load of cranking may try to seek a ground threw the field windings,internal regulator, brushes, etc---------. On one pole of the battery (positive) hydrogen gas is made, while on the negative pole oxygen gas is being formed---not a good place for a spark.
If you are not getting good results that way--it's because something is wrong--and the whole reason why you need to charge the battery to begin with. Check cables,cable ends,posts, ground, and ground cables from the engine to the frame. There is a problem---from a shorted battery to dirty posts, corroded cables, or bad grounds

When you connect the negative clamp from the battery that is fully charge to the chassis , or to the block of the engine that you want to start. you are getting the full EMF of the fully charge battery . If you connect the negative clamp of the fully charge battery to the battery post of the discharge battery in your car, possible troubles from the connections of the ground cable of the battery in your car, will make it harder for the EMF (Volts) of the fully charge battery to reach the starter motor. Any way is better to clean the battery terminals and the connection of the battery terminals to the starter motor and to ground of the discharged battery, if you have this problem.

Sure not a problem, however I would check grounds very carefully. Some where you have a poor ground connection, may be corroded or loose. Probably the cause of the low battery in the first place. Others have warned you about the danger of the gas discharge. Have seen many batterys blown to pieces caused by a spark.

Yes you can
The reason they recommend against it is that while charging a battery it gives off hydrogen gas, and if there is any movement in the cables there can be sparks and the battery would explode, covering you with sulfuric acid (this is rare but is does happen.
Look for where the black cable connects to the engine block and connect there or connect to the casing of the alternator both of those are good negative connections

its only when jump starting you go to chassis ground

there is no danger, just make sure you clamp negative to negative and positive to positive.
