The trial and metamorphosis are his best; some of his essays and short stories seem like exercises in description and literary style.

The trial is mostly a character study, so it is probably this plotlessness you recognise. To understand Kafka, one book is enough - his works are so complete that you can really know his style just by reading one novel.

Metamorphosis is probably his most complete work. And it won't take up much of your time since its very short.
