I want to be able to collect more than 10 animals in one level please help.

The only way you can obtain more than 10 animals is to play one level as either Sonic, Tails, or Knuckles and then play another level as Shadow, Eggman, or Rogue.
When you enter the Chao Garden as a hero, you will release your animals, and when you enter as a 'darkling', you will also release your animals. So, overall you will have 20 animals. That is the maximum.
But if you are just looking in one specific level, I guess you can just look for the same animal in either the hero or dark level or just stick with 10 animals.
