Who'll look at stars then? Who'll demote planets to dwarf planets? And, think I could cross the picket line as scab astronomer?

Scientists are not millionares. Most make less than a 100k a year - much less than a doctor, who probably didn't even spend as much time in school as a Ph.D. scientist.

That said, there's no reason for the IAU to go on strike. They aren't paid to be members, they do this for professional reasons. Besides, many astronomers aren't members. And we look at stars anyway.

No such thing would ever happen. The scientists there are already millionares. They really could care less about money, so they would really have no motive to go on strike. Science exceeds everything.
