Trust your gut. You cannot possibly "put away" everything that is of value to you. If your maid seems like she (he) is doing something shady, then begin your search for a new house cleaner.
My last cleaning service was angry because I would (nicely) have them go back and clean areas they missed (they missed a lot). They stole my "portable" GPS system from my vehicle. The laugh was on them because it was broken anyway. I have a new GPS, they got fired and I still do not trust cleaning services.

Well you dont really unless you just really "Suspect" something. Make yourself a list, or take some photos of things that are valuable to you. After she clean, go back and look wherever you keep these items, and make sure they are still there. As far as personal documents, such as financial statements, and bills, and all that, you need to put them in some place where she cannot find them- Place them in a certain order, and write down how you had them in order, and after she cleans, go and make sure she hasnt messed with them. If she cant be trusted, or you always suspect something, then you need a new maid. Otherwise, you will never feel safe, or secure with her cleaning your home.

If you plan on videotape first be sure to know the laws in your country on taping people it could be illegal in certain cases. but, it is the only way to go., also a sound activated recorded can be used and it is cheap.

you could set up a tiny video camera and tape her activities. That way, if she is up to something you will have evidence.

get some "nanny cams" they have them in clocks, in stuffed animals, and lots of other things. she will not even know they are cams.
