Guitarists(Playing outside)?

Question

For guys into fusion or jazz, what is your approach to playing "outside".. now for you non musicians.. I don't mean playing outside in the yard or park etc..

I'm a very accomplished Guitar Hero player, and I've never heard of playing "outside". Please educate us on this approach you speak of.
