It's because lent comes after it.. so it's the last day you are allowed to eat meat. Meat has fat. Also, the "fatted bull" (BOEUF GRAS) is a symbol of Mardi Gras. So there you have it.

The day before Ash Wed. the beginning of Lent, when people really pig out on their favorite foods, etc before giving up something for the duration of lent. A sort of sacrifice, therefore, they over-indulge on Fat Tue. as a last chance to enjoy that which they r about to give up during lent.

Fat Tuesday is the translation of Mardi Gras. It is used in French and Italian areas to refer to the day before Lent starts. Spanish and Portuguese areas celebrate this day as Carnival from Carne Vale or Goodbye Meat.

In both cases the idea is to eat the fatty meat before you begin fasting.

A lesser know English tradition terms it Pancake Day when sweet pancakes were eaten before the fasting.
