I'm interested in writing a script for anime series and hopefully pitch it some Anime producers.. etc etc. I'm not sure if writing a script for an anime series is the same as writing for regular American TV series.

I'm not trying to be sarcastic, but the dumber it is, the more likely it is to succeed. I've yet to see an anime that I didn't think was stupid, yet it sells like hotcakes. Be sure to put in lots of blank stares into nowhere, over-dramatized lines, and anything that defies the laws of physics. Don't forget to give it a Japanese sounding name that doesn't mean anything in Japanese.

Anime isn't all dumb and pointless (oh say, Super Milk-Chan?). As long as you have a plot and characters that people are willing to take into their hearts, you are good.

You might want to, however, write all of this out as a regular story with anime-ish settings, plots, characters, etc. Another possibility is to do that in a fanfiction ring and see how well it works with the anime fans.
