I know this for a fact from various HP books (non-series) and sites.
Teachers in the Order of Phoenix:
Severus Snape
Remus Lupin
Moody
Dumbledore
And that's it!
This isn't saying the others aren't in the Order, but in an interview, these were the only ones JKR confirmed.

Most of his previous ones still hold a teaching postion. Those like Remus Lupin are still in the series as active characters, but no longer teach.
Umbridge is the newest addition to the Staff in OoP.

If you mean the order itself then Severus Snape, Minerva McGonagall, and Remus Lupin are all mentioned.
