Technically, yes; if you stop drinking alcohol and start drinking non-alcoholic drinks, then you will eventually sober-up, but time away from alcohol has more to do with sobering-up than the non-alcoholic drinks you're drinking.

I'm not sure that "sober" is the right word. But I have seen something that could be described that way. Many times.
