How would I use the word doyen in the following sentence:

I am a doyen of fashion.

or

I am a doyenne of fashion.

?

That would make you the senior member of a group so using the word in that way I think would be correct. Not the doyenne of fashion though.

A doyen / doyenne of society is the only context I have heard of.

the second spelling is correct, however, the usage is incorrect. You could be a fashion doyenne, but not a doyenne of fashion.. is not idiomatically correct. Would be like saying I am a model of fashion as opposed to being a fashion model.. two different things.
