A fairy tale is a type of fantasy. Fantasy would be a larger category while a fairy tale is a member of that category. A fairy tale must have a fight between good and evil, royalty, somone in distress, usually a damsel, who is rescued. Examples of fairy tales would be Snow White, Cinderella, Beauty and the Beast and even Hansel and Gretel. However, fantasy also includes The Lord of the Rings...a fight between good and evil, but no royal family or damsel in distress. The difference is very subtle and usually not terribly important.

Fairy tales also generally have happy endings. Fantasy stories are often more for an older audience, deal with more detailed issues with more complicated plotlines, and the endings can go either way.

Fantasy is usually something you want to happen. A fairy tale is just made up.
