My first thought is some type of fungal growth, but it doesn't sound as if it's giving them too much hassle if they have had it through at least one molt. If it's whiteish in color it's probably a fungus. Curing a fungus on a crayfish can be a bit touchy as they are very, very sensitive to several of the standard fungus treatments. Treating them with salt at about 1 tablespoon per 5 gallons would be an option, but that may not be enough to kill the fungus.

My second thought is... What color is the fuzz? Could it be a brown or green algae growth? That's not uncommon and is completely harmless.

Over all I would say if it doesn't appear to be harming them, I wouldn't try to do anything about it.

I think it could be some sort of fungi, algee, or moss. Just be sure to clean the tank often. :)
