Spend a day at the Seattle Center and on the waterfront (Pike Place Market, etc.)
You can get a "go Seattle" card that for one price allows you to visit something like 30 of the main attractions in the area:

It will also list some of the biggest "hot spots" for tourists.

By the way, Mt. Rainier National Park is closed right now due to flood damage. I don't know when it will reopen (I don't think the authorities know yet either.)
But, another fun day drive would be to drive around the Olympic Peninsula. There's lots to see there. To mention a few: Hurricane Ridge, Dungeness Spit (both near Sequim), Hoh Rain Forest (near Forks), Kalaloch Beach (south of Forks).
As far as shopping centers go, they're all about the same. You can go to Westlake as part of the day you spend in Seattle. It's a little on the pricey side, but there are other flagship stores nearby.
Northgate or SouthCenter are fairly near and are your typical malls, with some high-end stores and some low-end.

Good attractions are:
Pike Place Market -- you can buy food, clothing, jewelry, and other homemade goods (and also see "flying fish" :D)
Space Needle -- Ride up to the top and have a lunch or brunch there, the food is great
Seattle Children's Theatre -- most of the time not performed by children, great shows for kids that many adults can appreciate too
The Underground Tour -- look at the "Old Seattle" in Pioneer Square. The Seattle we know today was bulit right on top of it, it is kind of creepy down there but very very interesting
Safeco Field -- go see a Mariner's baseball game, always a fun time
Good museums and zoos are:
Pacific Science Center -- I just went today with a friend, we checked out "Grossology" about how your body works. That exibit will be there until sometime in May
EMP or Experience Music Project -- has history of talented artists from the Pacific Northwest (including Jimi Hendrix) as well as all over the US, they have costumes and music for you to experiment with and you can make your own songs
Seattle Art Museum -- several pieces of beautiful art from many foreign countries
Point Defiance Zoo and Aquarium -- This is actually in Tacoma. best zoo I have ever been to. Very clean and the animals are well taken care of.
Museum of Glass -- this place is AMAZING! Located in Tacoma, has amazing sculptures of hot glass and it is right on the waterway.
Everywhere you wander about in Seattle you will find great shops and boutiques. In downtown Seattle and on Capitol Hill you will find the best shopping centers in the Pacific Northwest. A good breakfast/brunch is in Capitol Hill and it's called Glo's. GREAT FOOD!

Pike Place market
Discovery Park
Ballard Locks
Take a ferry ride or go on Argosy brunch cruise
Seattle Science Museum
( I personally did not like the underground tour or the EMP museum)
For shopping try:
Alderwood Mall in Lynnwood ( it has an outside area too)
South Seattle mall or The Super Mall

Renton, a city just south of Seattle, has a library that also serves as a bridge over the Cedar River. We are proud of this unique attraction.
As far as shopping centers with reasonable prices go, avoid Seattle and go to the smaller cities around it. Seattle is a big tourist area with tourist prices to match.

I would take her to the PIke Place Market, pacific Science Center, WestLake shopping Center, and rife the Ducks Tour if they are open! The Space Needle is always fun since people al over the world know about it. Have LOTS of fun!!
