What are the defining factors of this and why are they important when working in a helping profession?

Dictionary.com defines integrity as "adherence to moral and ethical principles; soundness of moral character; honesty."

The various helping professions each have their set of moral principles that professional helpers must adhere. Social workers have a council on social work ethics... and if I recall correctly, nurses also have a code of ethics to adhere.

If you must hide your actions or in-actions from others then the actions that are hidden are wrong.
All your actions must be yours and you must be proud of your actions.
The Old adage "Do as I say not as I do" does not work well with Integrity.
Never be scared, of what do, what is right, when questioned about your actions.
If you feel you must lie to protect yourself, your actions were wrong to begin with.
Stand up, take charge of you life, admit when your wrong.
You will get by a lot longer by always telling the truth.
