It's time I go from displaying my collection to storing it but I'm not sure how to start. I don't know how to store them, what to store them in, or even what part of the house to put them!!

Any help is greatly appreciated!

Put tag protectors (the small plastic kind) on all of the tags. Store each individual beanie in it's own ziploc style bag, take as much air out as possible, put them into a plastic tub with an airtight lid (like a Rubbermaid container), or purchase a watertight plastic container if you are worried about moisture. Don't store them in "extreme temperature" areas of the house like the attic or the basement.

I suggest any area of your house where you can easily control the temperature, it is best to keep them around 75 F, I would put them in a large box, with small (2cm diameter) holes on the sides just to let some air through.
