Why do babies' hair and eye color change by the time they grow-up?

This happens in just about all babies......blonde to brown hair....gray to brown eyes(me!)......etc.Why is this?

it's simply genetics. I had brown hair as a little kid, but my hair is black now that I'm 17. I've noticed most people's hair gets darker around puberty... but my eye color has always been brown
