Space whale. This name was given in one of the booklets that were made up from the original movie that used to come with a 45rpm disc for kids. Perhaps, Doesn't look like a whale any ways?

When I first read your question I was a bit perplexed by it. After reviewing several books on Star Wars (Including The Empire Strikes Back novel) the single best answer I can offer is the species of animal is identified as a space slug. I cannot find any thing that specifically identifies this particular one, but that should give you an idea as to where to start looking. In the movie, there is no reference to the name of the creature.
But I've never read any of the books so I don't know if the name is given elsewhere.
edit: Mynock are the small bat-like creatures flying around inside the big creature's throat. Mynock is not the name of the big worm they thought was a cave.
