Well, usually in a true battle (which usually aren't organized) when a line completely outshines (does WAY better than) the other, the throwing or dropping of the sticks is like saying whatever you guys play next it still wont be better than ours so we don't even NEED to play anymore.
Now in the movie I guess they tried to show that as well, but it was said before they started the battle that each school could only play two cadences, so even if either school hadn't dropped their sticks, they still would of only played twice.

It is showing that there is no respect for the other line. They are saying here beat this! It is symbolic of the old rock n roll days when a band would just drop their instruments and walk away.
